Cookies were always something I reluctantly made. It never seemed much of a challenge.. and that beating of butter and sugar.. I always got some factor wrong.. either the butter was never the right temperature or sugar was too clumpy or too granulated…. and never mind the numerous failures..
But this Sunday dawned with me wanting to voluntarily swelter in this maddening heat. After taking stock of ingredients and not wanting to step out to plug gaps, this is what I made.
Double Chocolate Chip Whole Wheat & Buckwheat Cookies
1.5 cups whole wheat flour
1/2 cup buckwheat flour
1 tsp baking soda
1 cup butter, softened
1 cup chocolate chips (or chunks)
1/2 cup chocolate, melted
3/4 cup sugar
- Mix all the dry ingredients before starting on the butter.
- Beat the butter and sugar till it’s lightened and aerated.
- Add the egg and beat till incorporated.
- Add melted chocolate.
- Add the flour mixture, half a cup at a time, without over mixing.
- Bake for about 20 minutes till crisp.
The taste is fabulous.. the buckwheat gives a delicious nutty taste which makes you reach for another one as you are finishing the one in hand. The buckwheat flour is from this batch and is almost over. I’ve tried adding to numerous things like bread sticks, cakes and pancakes. The nutty aftertaste is such a delicious lure.
