A simple corn muffin recipe

I tried making corn muffins a few days ago and cant quite decide how successful they were.. as the last two..decayed due tomumbai’s sharp rise in temperature and humidity and my precious bakes not making it to the fridge.

1 cup cornmeal

1 cup wheat flour

1/2 spoon salt

1 tsp organo

1 egg

1 tsp baking powder and baking soda

and milk..about 1/2 to 3/4 cup milk

1/2 cup oil

grated cheese (optional)

Mix all.. add milk only as needed to make the mix wet. I  even added cheese. Savoury muffins are a good idea and can be a good replacement to bread in those soup and salad dinners.

The first batch I made (and the first picture) there wasn’t enough milk and the muffins came out dry and crumbly.. the second batch was perfect.

An alteration could be trying it with some grated or pureed vegetables.
